The secret to making these delicious Butterscotch Cream Cupcakes is to not over cook them, as we are wanting them to be as moist and fluffy as possible giving it that perfect melt in your mouth texture. I don’t know about everyone else but I prefer more butterscotch sauce as it really brings out the strong flavour and sweetness, you can always add more or less depending on your preference.

 




 

Butterscotch Sauce is quite difficult to find in your local supermarkets, as they’re often named Toffee Sauce. We recommend making your own butterscotch sauce as it will have more of that natural butterscotch flavour as well as the added benefit of having it fresh and perfect every time.

  • 1 Cup Self-Raising Flour Sifted
  • ½ Cup Caster Sugar
  • ½ Cup Butter Softened
  • 2 Eggs
  • 1 tsp Vanilla Extract

Butterscotch Sauce

  • ½ Cup Butter
  • Cup Full Cream
  • ¼ Cup Golden Syrup
  • ½ Cup Dark Brown Sugar

To Decorate

  • 1 Cup Full Cream
  • 2 tbsp Icing Sugar
  • ½ tsp Vanilla Extract

Instructions
 

  • Preheat the oven to 190°C and line a 12 hole cupcake tin with patty pans.
  • Combine the flour, sugar, butter, eggs and vanilla extract in a bowl and whisk together for 2 minutes.
  • Divide the mixture between the patty pans, then bake for 15-20 minutes. Transfer the cupcakes to a wire rack and leave to cool completely.
  • To make the butterscotch sauce, put the butter, cream, golden syrup and brown sugar in a small saucepan and boil for 2 minutes, stirring to dissolve the sugar.
  • Leave to cool completely. Whisk the cream with the icing sugar and vanilla until thick.
  • Remove the patty pans from the cupcakes and cut each one in half horizontally.
  • Add a spoonful of cream to the bottom half of each cupcake, drizzle over the butterscotch sauce and sandwich the cupcakes back together.

  • Boiling Water
  • 36 Red Heart-Shaped Sweets

Instructions
 

  • Preheat oven to 190°C and line a 36 hole mini cupcake tin with patty pans.
  • Combine the flour, sugar, butter, eggs and vanilla extract in a bowl and whisk together for 2 minutes.
  • Divide the mixture between the patty pans, then transfer to the oven and bake for 10 - 15 minutes.
  • Test with a wooden toothpick, if it comes out clean then the cupcakes are done.
  • Remove cupcakes from oven and leave to cool.
  • Sieve the icing sugar into a bowl, then slowly stir in the boiling water a few drops at a time until you have a thick icing.
  • Spoon on top of the cupcakes and top them with a heart shaped sweet.

Ingredients
  

  • 10 tbsp Unsalted Butter
  • 1 Cup Sugar
  • ½ Cup Brown Sugar
  • tsp Vanilla Extract
  • 1 Egg
  • 2 Cups All-purpose flour
  • 1 tsp Baking Soda
  • ¾ tsp salt
  • ½ tsp Cream of Tartar
  • 1 Cup Rainbow Sprinkles

Instructions
 

  • Preheat the oven to 350 degrees. Prepare sheet pans by lining them with silicone baking mats or parchment paper.
  • In a large mixing bowl or the bowl of a stand mixer, cream the butter, sugar, and brown sugar on medium speed until light and fluffy, about 2 minutes.
  • Scrape the sides of the bowl and add the vanilla and egg, beating on low until incorporated.
  • Add the flour, baking soda, salt, and cream of tartar, and beat on low speed just until the dry ingredients are combined. Scrape the sides of the bowl and add the sprinkles. Beat just until combined.
  • Scoop out 1-1/2 tablespoon sized scoops (I use a medium cookie scoop) and roll each dough ball briefly in your hands to smooth out the rough edges of dough. Place on the prepared baking sheets 2 inches apart.
  • Bake in the preheated oven for about 10 minutes. or until the tops of the cookies have just begun to crack and the edges are set.
  • Allow to cool on the sheet pans for about 5 minutes before removing to a cooling rack to complete cooling.
  • Enjoy!!

  • ½ Cup vegetable oil
  • ¾ Cup granulated sugar
  • 2 Eggs
  • 1 ¼ Cup all purpose gluten-free flour ( We use Woolworths Free From Gluten Plain Flour 750g )
  • ¼ tsp Salt
  • 1 ¾ tsp Baking powder
  • ½ Cup Dairy Free Milk (Full cream milk if not allergic to dairy)
  • 2 tsp Vanilla Extract

Decorating

  • ½ Cup dairy-free butter (optional)
  • 1 tsp gluten free vanilla extract
  • 3 Cups powdered sugar
  • 2 tbsp dairy-free milk (optional)

Instructions
 

  • Preheat oven to 180°C. Position baking tray in center of oven. Line cupcake pan with baking paper; set aside.
  • In a medium mixing bowl combine oil and sugar.
  • Add eggs and beat with a mixer for one minute. Add flour, salt, baking powder, dairy-free milk (optional), and vanilla extract; beat for one minute.
  • Spoon batter evenly into cupcake tray. Bake for 18-20 minutes or until the centers springs back when touched and cupcakes are very lightly browned.
  • Leave out to cool completely before decorating with icing.
  • For the icing: In a medium mixing bowl, beat together dairy-free butter and vanilla extract until smooth and creamy.
  • Gradually add powdered sugar, one cup at a time, beating well. Alternate one cup of powdered sugar and 1 tablespoon of dairy-free milk until all ingredients are blended.
  • Add additional dairy-free milk if needed to obtain desired consistency.
  • Add icing to cupcakes
  • Enjoy!

  • It's optional to use dairy free butter and dairy-free milk in this recipe, you can certainly use normal milk and butter if dairy isn't a problem.

  • Preheat oven to 180°C. Position baking tray in center of oven. Line two 12-serving cupcake tins with baking paper.
  • In a large mixing bowl, stir together sugar, flour, cocoa, baking powder, baking soda, and salt until all lumps are gone.
  • Add eggs, milk, oil, and vanilla. Beat with a mixer for two minutes.
  • Stir in boiling water.
  • Spoon batter evenly into cupcake tray. Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from oven and leave out to cool completely.
  • For the icing: In a medium mixing bowl, beat butter and vanilla extract until smooth and creamy. Add cocoa powder and beat until combined. Gradually add powdered sugar, one cup at a time. Slowly beat in milk. Beat in additional milk if needed, to obtain desired consistency.
  • Apply icing to cupcakes.
  • Enjoy!

Ingredients

  • 1 ½ cups ground almonds
  • cups icing sugar
  • 2 eggs
  • 1 tbsp raspberry syrup
  • 10 drops pink food colouring

Decoration

  • ½ cup raspberry jam

Instructions
 

  • Oil and line a large baking tray with baking paper
  • Grind the ground almonds and icing sugar together in a mixer till its a fine powder
  • Whisk the egg whites into a bowl then carefully fold in the almond and sugar mixture with the raspberry syrup and food colouring.
  • Spoon the mixture into a piping bag fitted with a large plain piping tip and pipe 1" (2 ½ cm) circles onto the baking tray.
  • Leave the uncooked macaroons to stand for 30 minutes to form a skin.
  • Preheat oven to 170°C (150°C fan).
  • Bake for 10-15 minutes or until crisp on the outside and a bit chewy in the middle.
  • Leave macaroons out to cool completely
  • Sandwich the macaroons together with jam in the middle.

  • 2 Cups icing sugar
  • Boiling Water to mix food colouring
  • 1 tsp ground cinnamon

Instructions
 

  • Preheat oven to 190°C (170° fan).
  • Line a 12 hole cupcake tin with patty pans.
  • Combine the flour, sugar, butter and eggs in a bowl and whisk together for 2 minutes.
  • Divide the mixture evenly across the 12 patty pans, place in oven and bake for 15-20 minutes.
  • Test with a toothpick, if it comes out clean the cupcakes are done.
  • Leave out to cool
  • Place icing sugar into a bowl, then slowly stir in the boiling water a few drops at a time until you have a spoonable icing mix.
  • Stir in the pink food colouring a drop at a time until you reach your desired colour.
  • Spoon the icing onto the cupcakes and sprinkle over the ground cinnamon.

  • ½ Cup caster sugar
  • ½ Cup strawberry jam
  • 2 eggs

Decoration

  • ½ Cup butter softened
  • 2 Cups icing sugar
  • pink food colouring
  • cut up strawberries OR sprinkles

Instructions
 

  • Preheat oven to 190°C (170° fan).
  • Line a 12 hole cupcake tin with patty pans.
  • Combine the flour, cocoa powder, sugar, butter and eggs in a bowl and whisk together for 2 minutes.
  • Divide half the mixture evenly across the 12 patty pans, then add 1tsp of strawberry jam in the centre of each one.
  • Top with the rest of the cake mixture, then place in oven and bake for 15-20 minutes.
  • Remove and leave to cool.
  • To make the buttercream, beat the butter with a wooden spoon until until light and fluffy, then beat in the icing sugar a quarter at a time.
  • Use a whisk to incorporate the strawberry syrup, then whisk for 2 minutes.
  • Spoon the buttercream into a piping bag (we recommend using the star piping tip), then pipe a swirl on top of each cupcake.
  • Sprinkle with coloured sprinkles or place a cut up strawberry on top.
