If you’re like me and you love chocolate cupcakes this recipe will make you wanna jump in the kitchen and whip up a batch, they are so rich with flavour that they will have you coming back again and again.

This chocolate cupcake recipe is one of my personal favourite’s, mainly because I’m a chocoholic and everything that has chocolate in it I’m addicted to.

This is one of those recipes where you would barely be able to tell that it was Gluten-Free, that’s because the combination of texture and flavour has a perfect blend of creamy, making it a divine choice.

Ingredients
  

Ingredients

  • Cups granulated sugar
  • 2 Cups all purpose gluten-free flour ( We use Woolworths Free From Gluten Plain Flour 750g )
  • ¾ Cup unsweetened cocoa
  • tsp gluten-free baking powder
  • 1 tsp salt
  • 2 eggs
  • 1 Cup Milk (or dairy-free milk)
  • ½ Cup vegetable oil
  • tsp vanilla extract
  • ¾ Cup boiling water

Decorating

  • ½ Cup butter (or dairy-free butter)
  • tsp vanilla extract
  • ½ Cup unsweetened cocoa powder
  • Cups powdered sugar
  • ¼ Cup Milk (or dairy-free milk)

Instructions
 

  • Preheat oven to 180°C. Position baking tray in center of oven. Line two 12-serving cupcake tins with baking paper.
  • In a large mixing bowl, stir together sugar, flour, cocoa, baking powder, baking soda, and salt until all lumps are gone.
  • Add eggs, milk, oil, and vanilla. Beat with a mixer for two minutes.
  • Stir in boiling water.
  • Spoon batter evenly into cupcake tray. Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from oven and leave out to cool completely.
  • For the icing: In a medium mixing bowl, beat butter and vanilla extract until smooth and creamy. Add cocoa powder and beat until combined. Gradually add powdered sugar, one cup at a time. Slowly beat in milk. Beat in additional milk if needed, to obtain desired consistency.
  • Apply icing to cupcakes.
  • Enjoy!

Notes

  • It's optional to use dairy free butter and dairy-free milk in this recipe, you can certainly use normal milk and butter if dairy isn't a problem.
