Ingredients
  

Ingredients

  • ½ Cup vegetable oil
  • ¾ Cup granulated sugar
  • 2 Eggs
  • 1 ¼ Cup all purpose gluten-free flour ( We use Woolworths Free From Gluten Plain Flour 750g )
  • ¼ tsp Salt
  • 1 ¾ tsp Baking powder
  • ½ Cup Dairy Free Milk (Full cream milk if not allergic to dairy)
  • 2 tsp Vanilla Extract

Decorating

  • ½ Cup dairy-free butter (optional)
  • 1 tsp gluten free vanilla extract
  • 3 Cups powdered sugar
  • 2 tbsp dairy-free milk (optional)

Instructions
 

  • Preheat oven to 180°C. Position baking tray in center of oven. Line cupcake pan with baking paper; set aside.
  • In a medium mixing bowl combine oil and sugar.
  • Add eggs and beat with a mixer for one minute. Add flour, salt, baking powder, dairy-free milk (optional), and vanilla extract; beat for one minute.
  • Spoon batter evenly into cupcake tray. Bake for 18-20 minutes or until the centers springs back when touched and cupcakes are very lightly browned.
  • Leave out to cool completely before decorating with icing.
  • For the icing: In a medium mixing bowl, beat together dairy-free butter and vanilla extract until smooth and creamy.
  • Gradually add powdered sugar, one cup at a time, beating well. Alternate one cup of powdered sugar and 1 tablespoon of dairy-free milk until all ingredients are blended.
  • Add additional dairy-free milk if needed to obtain desired consistency.
  • Add icing to cupcakes
  • Enjoy!

Notes

  • It's optional to use dairy free butter and dairy-free milk in this recipe, you can certainly use normal milk and butter if dairy isn't a problem.
