Raspberry Macarons Recipe
To think 2020 was probably the craziest year we have ever seen and with lots of struggles, lots of emotions and a lot of hard times, we can almost say goodbye to the year that will be remembered as one of the most insane years in history. We know that lots of you have had to work from home and a lot of things have now gone digital making everything extremely accessible and right at our fingertips.

Raspberry Macarons Recipe
Ingredients
Ingredients
- 1 ½ cups ground almonds
- 1½ cups icing sugar
- 2 eggs
- 1 tbsp raspberry syrup
- 10 drops pink food colouring
Decoration
- ½ cup raspberry jam
Instructions
- Oil and line a large baking tray with baking paper
- Grind the ground almonds and icing sugar together in a mixer till its a fine powder
- Whisk the egg whites into a bowl then carefully fold in the almond and sugar mixture with the raspberry syrup and food colouring.
- Spoon the mixture into a piping bag fitted with a large plain piping tip and pipe 1" (2 ½ cm) circles onto the baking tray.
- Leave the uncooked macaroons to stand for 30 minutes to form a skin.
- Preheat oven to 170°C (150°C fan).
- Bake for 10-15 minutes or until crisp on the outside and a bit chewy in the middle.
- Leave macaroons out to cool completely
- Sandwich the macaroons together with jam in the middle.
- Enjoy!
