Valentines Day Mini Cupcake Recipe

- ½ Cup Self Raising Flour
- ½ Cup Caster Sugar
- ½ Cup Butter
- 2 Eggs
- 1 tsp Vanilla Extract
Decorating
- 2 Cups Icing Sugar
- Boiling Water
- 36 Red Heart-Shaped Sweets
Instructions
- Preheat oven to 190°C and line a 36 hole mini cupcake tin with patty pans.
- Combine the flour, sugar, butter, eggs and vanilla extract in a bowl and whisk together for 2 minutes.
- Divide the mixture between the patty pans, then transfer to the oven and bake for 10 - 15 minutes.
- Test with a wooden toothpick, if it comes out clean then the cupcakes are done.
- Remove cupcakes from oven and leave to cool.
- Sieve the icing sugar into a bowl, then slowly stir in the boiling water a few drops at a time until you have a thick icing.
- Spoon on top of the cupcakes and top them with a heart shaped sweet.
